CARACTERISTIQUES PHYSICO-CHIMIQUES ET BIOCHIMIQUES DE QUELQUES VARIETEES DE DATTES CONSOMMEES DANS LA REGION D’AOULEF (ADRAR)
In Saharan regions with more than 900 date palm cultivars, dates play a vital role in human nutrition. In this work we studied the physicochemical and biochemical characteristics of some varieties of dates consumed in the region of Aoulef (Adrar). The results obtained show that Bamekhlouf H'mira and have the highest values of the water content with 23,92 and 23,01% respectively. The highest ash contents are recorded in Mesudiya (4,06%) and Tindkan (3,29). The highest titratable acidity levels are recorded in Bamekhlouf (0,90%) and Aghamou (0,80%). As for total sugars, H'mira and Takerbouch dates are the sweetest with respectively (77,77 and 76,44%).
The results obtained represent a quality index of the product and a database for a better valorization of the dates of the Saharan zones
